Method
- 1
Pat the prawns dry and season with half the salt. Heat 1 tbsp of the oil in a large frying pan over a high heat.
- 2
Fry the prawns for 1 to 2 minutes on each side until just pink and curled. Tip them onto a plate.
3 min - 3
Add the remaining oil to the pan with the onion. Cook over a medium heat for 4 minutes until soft, then add the garlic for 30 seconds.
4 min 30 s - 4
Stir in the passata and your ready made chipotle adobo sauce (see the base recipe) with 100 ml of water. Simmer for 5 minutes until glossy.
5 min - 5
Return the prawns and their juices to the pan with the lime juice. Cook for 1 minute until heated through and coated, then check the seasoning.
1 min - 6
Reheat your ready made cilantro lime rice (see the base recipe) until steaming hot. Spoon onto plates, top with the prawns, sliced avocado and coriander.
Tips
- Do not overcook the prawns. They go from juicy to rubbery in about a minute, which is why they are cooked first and only rewarmed in the sauce.
- Buy raw prawns, which turn pink when cooked. Pre cooked ones go tough when heated again.
- Add the chipotle a spoon at a time. It is strong, and the tomato and lime will not tame it once it is in.
Storing and freezing
Eat straight away. Leftovers keep in the fridge for 1 day, reheated gently until steaming hot all the way through. Do not freeze cooked prawns in sauce.
Questions
Can I use frozen prawns?
Yes. Thaw them fully in the fridge overnight, drain and pat very dry before frying, or they steam in the pan and turn watery.
How do I make it milder?
Use 60 ml of chipotle adobo sauce rather than 90 ml and serve with a spoonful of soured cream or lime crema on the side.
Can I make it with chicken instead?
Yes, use 500 g diced chicken breast and cook it for 5 to 6 minutes first until no pink remains, then follow the same sauce method.
