Method

  1. 1

Warm your ready made shredded chicken (see the base recipe) in a pan until steaming hot all the way through. Season with salt and a squeeze of lime.

  2. 2

Warm your ready made corn tortillas (see the base recipe) for 20 seconds each side so they bend without cracking.

  3. 3

Spoon about 2 tbsp chicken down the centre of each tortilla and roll up tightly. Secure with a cocktail stick or lay seam side down.

  4. 4

Heat the oil in a deep frying pan to 180 degrees C. Fry the flautas in batches, seam down first, for 2 to 3 minutes until golden and crisp, turning once. Drain on kitchen paper.

    3 min
  5. 5

Pile onto plates with lettuce, queso fresco and radish, and spoon over your creamy jalapeno cilantro sauce (see the base recipe).

Tips

  • Keep the filling dry; wet chicken makes soggy flautas that split.
  • Roll tightly and fry seam side down first so they stay closed.
  • Bake them instead: brush with oil and cook at {t220} for 15 to 18 minutes, turning once.

Storing and freezing

Best fresh. Cooked flautas keep 2 days in the fridge; reheat on a tray at {t200} for 10 minutes until crisp and hot all the way through.

Questions

What is the difference between flautas and taquitos?

Flautas are usually longer, made with larger tortillas; taquitos are smaller. Names vary by region.

Can I use flour tortillas?

Traditionally flautas use corn. Flour is possible but not gluten free and the texture is different.

How do I stop them unrolling?

Roll tightly, fry seam side down first, and use a cocktail stick if needed.
