Method
- 1
Heat the oven to 200°C (180°C fan). Heat the oil in a frying pan over a medium heat and cook the onion for 5 minutes until soft. Add the garlic and cook for 1 minute.
6 min - 2
Add the chopped prawns and cook for 2 to 3 minutes until pink and opaque all the way through. Take off the heat and stir through half the coriander.
- 3
Warm your green enchilada sauce (see the base recipe) in a wide pan over a low heat. Spread 4 tbsp over the base of a large baking dish.
- 4
Warm your ready made corn tortillas (see the base recipe) in a dry pan so they bend. Dip each in the warm sauce, fill with prawn mixture and a little cheese, roll up and place seam side down in the dish.
- 5
Pour over the remaining sauce and scatter over the rest of the cheese.
- 6
Bake for 15 minutes until bubbling and golden and the filling is steaming hot all the way through.
15 min - 7
Drizzle with the lime crema (see the base recipe), scatter with coriander and serve straight away.
Tips
- Cook the prawns only briefly before baking, as they will cook a little more in the oven.
- Warm the tortillas and the sauce so the tortillas do not split.
- Use a baking dish that fits the enchiladas snugly so the sauce covers them.
- Serve with arroz verde or a green salad.
Storing and freezing
Keeps in the fridge for up to 1 day. Cool within 1 to 2 hours and reheat in a hot oven until steaming hot all the way through. Do not freeze.
Questions
Can I use cooked prawns?
Yes, but add them only for the last minute of the filling cooking, just to warm through. They will turn rubbery if heated for longer.
Can I make them ahead?
Assemble up to 6 hours ahead, covered in the fridge, and bake just before serving. Add 5 minutes to the baking time.
Are these enchiladas gluten free?
Yes. Prawns, tomatillo sauce, cheese and masa harina tortillas contain no gluten, egg or nuts. They contain dairy and shellfish.
