Method

  1. 1

Warm the mole poblano (see the base recipe) in a pan with 100 ml water, stirring until loose. Add the shredded chicken (see the shredded chicken base recipe) and simmer for 5 minutes until steaming hot all the way through.

  2. 2

Toast the sesame seeds in a dry pan for 1 minute until golden.

  3. 3

Lay the tostadas (see the base recipe) on a board. Pile the mole chicken on each tostada.

  4. 4

Top with the lettuce, avocado, red onion and sesame seeds. Serve at once with lime wedges.

Tips

  • Assemble just before eating. A tostada left under wet topping goes soft in minutes.
  • Keep the filling thick, not saucy, so it stays on the tostada.
  • Eat with your hands over a plate; they are not tidy.

Storing and freezing

Keep the mole chicken in the fridge for up to 3 days and reheat until steaming hot. Do not store assembled tostadas.

Questions

Are tostadas the same as taco shells?

No. A tostada is a flat tortilla fried or baked until crisp, used as an open base. A taco shell is folded. Tostadas hold toppings like a plate.

Can I use a vegetarian filling?

Yes. Use black beans, fried mushrooms or roast squash with the mole instead of chicken.
