Method
- 1
Cook the rice noodles to the packet instructions, drain and rinse in cold water. Set aside.
- 2
Heat the oil in a large pan over a medium heat. Fry your ready made Thai green curry paste (see the base recipe) for 2 minutes until fragrant.
2 min - 3
Pour in your ready made homemade chicken stock (see the base recipe) and the coconut milk. Bring to a simmer and cook for 8 minutes.
8 min - 4
Add the mushrooms and fish sauce and simmer for 3 minutes.
3 min - 5
Add the prawns and pak choi and cook for 3 minutes, until the prawns are pink and cooked through.
3 min - 6
Stir in the lime juice. Divide the noodles between bowls, ladle over the soup and top with coriander.
Tips
- Add the noodles to the bowls, not the pot, so they do not go soft and soak up the broth.
- If you have no homemade stock, use a gluten free stock cube and omit extra salt.
- Prawns need only 3 minutes. Add them last so they stay tender.
Storing and freezing
Keep the broth and noodles separate. Cool the broth within 1 to 2 hours and keep in the fridge for up to 2 days. Reheat until steaming hot all the way through and add fresh prawns if needed.
Questions
Can I use a stock cube instead of homemade stock?
