Method
- 1
Put your ready made chicken stock (see the base recipe) in a large pan with the rinsed rice, ginger and your ready made Thai green curry paste (see the base recipe). Bring to the boil.
- 2
Add the chicken thighs, reduce to a gentle simmer and cook uncovered for 35 to 40 minutes, stirring often, until the rice breaks down and the porridge is thick.
40 min - 3
Lift out the chicken and shred it with two forks.
- 4
Return the chicken to the pan and add the fish sauce. If it is too thick, loosen with a splash of water. Simmer for 5 minutes.
5 min - 5
Taste and adjust the salt with more fish sauce.
- 6
Ladle into bowls and top with spring onions, coriander, chilli and a squeeze of lime.
Tips
- Stir often as congee catches on the base of the pan.
- Add more water for a looser porridge.
- Cool and reheat leftover congee with extra stock, as it thickens.
Storing and freezing
Cool within 1 hour and keep in the fridge for up to 1 day. Reheat once, until steaming hot all the way through, adding a splash of water. Do not freeze.
