Method
- 1
Heat the oil in a large pan over a medium heat. Cook the onion for 5 minutes until soft. Add your ready made Thai green curry paste (see the base recipe) and fry for 2 minutes.
7 min - 2
Add the chicken and stir for 3 minutes. Mix the cornflour with a little of the water, then add it to the pan with the rest of the water, coconut milk and fish sauce.
3 min - 3
Simmer for 15 minutes until the sauce is thick and the chicken is cooked. Stir in the peas, then cool completely before filling the pie.
15 min - 4
Heat the oven to 200°C (180°C fan). Roll out your ready made shortcrust pastry (see the base recipe) and use two thirds to line a 22 cm pie dish.
- 5
Spoon in the cold filling. Cover with the remaining pastry, trim and crimp the edges, and cut a steam hole. Brush with the beaten egg.
- 6
Bake for 35 minutes, until the pastry is deep golden and the filling is steaming hot all the way through. Rest for 10 minutes before serving.

Tips
- Always cool the filling before it goes under pastry or the base turns soggy.
- Chill the lined dish for 15 minutes before filling for a crisper base.
- Serve with green beans or a cucumber salad to cut the richness.
Storing and freezing
Cool within 2 hours. Keep in the fridge for up to 3 days or freeze for up to 3 months. Reheat until steaming hot all the way through.
Questions
Can I use ready rolled pastry?
Yes, but check it is the right type. Your homemade shortcrust gives the best texture, and keeps the pie free from additives.
Is this pie gluten free?
Not with ordinary shortcrust pastry. Use gluten free shortcrust and homemade paste for a gluten free pie.
Can I make a top crust only?
Yes. Put the filling in a dish and cover with pastry only, baking for 25 minutes.
