Method

  1. 1

Boil the potatoes in salted water for 8 minutes until just starting to give when pierced. Drain well and let them steam dry for 5 minutes.

    8 min
  2. 2

Heat the oven to 220°C (200°C fan). Tip the potatoes into a bowl and rough them up a little by shaking, which makes crisp edges.

  3. 3

Add your ready made tandoori marinade (see the base recipe) and the oil and turn until every piece is coated.

  4. 4

Spread on a roasting tray in one layer, cut side down. Roast for 35 to 40 minutes, turning once, until deep red, crisp and blistered.

  5. 5

Squeeze over the lemon juice, sprinkle with the chaat masala and coriander, and serve hot.

Tips

  • Shake the parboiled potatoes in the colander before marinating so the surfaces are rough and catch the coating.
  • Use a big tray so the potatoes sit in one layer. Crowding makes them steam.
  • Chaat masala adds a sour, salty finish. Without it, use a little extra lemon juice and salt.

Storing and freezing

Keeps for 3 days in the fridge in a covered tub. Reheat on a tray in a hot oven until crisp and steaming hot all the way through. Not ideal for freezing.

Questions

Can I cook these in an air fryer?

Yes. Cook the coated potatoes at 190C for 15 to 18 minutes, shaking halfway, in two batches so the basket is not crowded.

Are they gluten free?

Yes, if your garam masala and chaat masala are labelled gluten free. Some ready spice blends contain wheat as a filler.

Can I use bigger potatoes?

Yes. Cut them into 3 cm chunks, and boil for the same time. Floury potatoes such as Maris Piper give a fluffier middle.
