Method

  1. 1

Wipe the mushrooms clean with kitchen paper rather than washing them, so they do not take on water.

  2. 2

Mix the mushrooms, pepper and onion with your ready made tandoori marinade (see the base recipe) in a large bowl. Leave for 30 minutes, or up to 3 hours in the fridge.

  3. 3

Thread onto skewers and brush lightly with the oil. Heat the grill to its highest setting.

  4. 4

Grill 8 cm from the heat for 12 to 15 minutes, turning every 4 minutes, until the mushrooms are browned, blistered and tender.

Scatter with coriander and serve with the lemon wedges, naan or rice.

Tips

  • Choose even sized mushrooms so they cook at the same speed on the skewer.
  • Do not wash the mushrooms, which makes the marinade watery and the grilling steamy.
  • Keep the pieces about 3 cm so they char before drying out.

Storing and freezing

Keeps for 2 days in a covered tub in the fridge. Reheat in a hot oven until steaming hot all the way through. Not suitable for freezing.

Questions

Can I bake them instead?

Yes. Spread on a tray at 220C for 20 to 25 minutes, turning once, until blistered. Skewers are not needed.

Are they vegan?

Not with this yoghurt based marinade. Use the dairy free version made with coconut yoghurt and they are fully plant based.

What goes well with them?

Warm flatbreads, a mint raita and a tomato and onion salad. They also pack well into wraps.
