Method
- 1
Put your ready made tandoori marinade (see the base recipe) in a large bowl. Add the paneer, peppers and onion and turn gently until everything is coated. Leave for 30 minutes at room temperature, or up to 4 hours in the fridge.
30 min - 2
If using wooden skewers, soak 8 of them in water for 20 minutes so they do not burn.
- 3
Thread the paneer, pepper and onion onto the skewers, alternating them. Brush the skewers lightly with the oil.
- 4
Heat the grill to its highest setting, or heat a griddle pan until very hot. Cook the skewers for 10 to 12 minutes, turning every 3 minutes, until the edges are charred and the paneer is golden.
11 min - 5
Squeeze over the lemon, scatter with the coriander and serve straight away with the lemon wedges.
Tips
- Cut the paneer in big cubes. Small pieces dry out and go rubbery under a hot grill.
- Soak wooden skewers, or use flat metal ones, which stop the cubes spinning when you turn them.
- Do not over marinate paneer. Four hours is plenty, as the lemon in the coat can make it crumbly.
Storing and freezing
Keeps 2 days in a covered tub in the fridge. Reheat in a hot oven for 8 minutes until steaming hot, or eat cold in a wrap. Not ideal for freezing.
Questions
Can I make these without a grill?
Yes. Roast the skewers in an oven at 240C for 15 to 18 minutes, turning once, until the edges blister and catch.
Is paneer gluten free?
Plain paneer is naturally gluten free, but check the label on any flavoured or ready marinated pack. This recipe is gluten free if your garam masala is.
What can I serve with these?
Warm naan or chapatis, a crisp salad with cucumber and tomato, and a spoonful of mint chutney or raita make a good meal.
