Method
- 1
Boil the potato cubes in salted water for 8 minutes until just tender, then drain and steam dry for 2 minutes.
8 min - 2
Heat the oil in a large frying pan over a medium high heat. Fry the potatoes for 8 minutes, turning, until golden. Push to one side.
8 min - 3
Add your homemade Mexican chorizo (see the base recipe) to the pan and fry for 6 minutes, breaking it up, until cooked through, browned and crumbly. Add the onion and cook for 3 minutes.
9 min - 4
Stir in your ready made chipotle tinga sauce (see the base recipe) and 50 ml of water. Simmer for 5 minutes until the sauce clings to the potatoes and chorizo.
5 min - 5
Warm the corn tortillas (see the base recipe) in a dry pan for 30 seconds each side.
- 6
Fill the tortillas with the chorizo and potato mix, then add the radish, coriander and lime juice.
Tips
- Fry the potatoes until properly golden before adding the chorizo. This gives crisp edges instead of mushy pieces.
- Mexican chorizo is raw and crumbly. Cook it fully until no pink remains, then drain extra fat from the pan if there is a lot.
- Add the sauce at the end only, so the potatoes stay crisp.
Storing and freezing
Cool quickly and keep in the fridge for up to 3 days. Reheat until steaming hot all the way through. The filling freezes well for up to 2 months.
Questions
Can I use shop bought chorizo?
Spanish cured chorizo is a different product. Use fresh uncooked Mexican style chorizo or sausage meat with paprika, chilli and vinegar instead.
Is it gluten and dairy free?
Yes, as long as your chorizo, tinga sauce and tortillas follow the base recipes, which are gluten free and dairy free. Check the chipotle tin label.
How can I make it milder?
Reduce the tinga sauce to 100 ml and add a tin of chopped tomatoes. Serve with a spoon of soured cream or sliced avocado.
