Method
- 1
Mix the cumin, paprika, oregano and salt. Pat the fish dry, rub with the olive oil and then the spice mix.
- 2
Toss the cabbage with the lime juice, coriander and a pinch of salt. Leave to soften for 10 minutes.
- 3
Heat a griddle pan or heavy frying pan over a high heat until very hot. Cook the fish for 3 to 4 minutes each side, depending on thickness, until opaque all the way through and flaking easily.
7 min - 4
Rest for 2 minutes, then break into large flakes with a fork.
- 5
Warm the tortillas from your base recipe in a dry pan for 30 seconds each side and keep wrapped in a cloth.
- 6
Fill with cabbage and fish. Add pickled red onions (see the base recipe) and spoon over your ready made creamy avocado salsa (see the base recipe).
Tips
- Pat the fish very dry so it sears instead of steaming.
- Do not move the fish while it sears. It will lift away easily when a crust has formed.
- Shred the cabbage as thin as possible so it eats as a crunchy slaw rather than big chunks.
Storing and freezing
Eat the same day. Keep cooked fish covered in the fridge for up to 1 day and eat it cold in a salad or reheat until steaming hot all the way through.
Questions
What fish works best?
Any firm white fish such as cod, haddock, hake or pollock. Salmon or sea bass also work, but the spice mix suits white fish best.
Can I use frozen fish?
Yes. Thaw it fully in the fridge overnight and pat very dry before seasoning.
Can I make these hotter?
Add a pinch of cayenne to the spice rub or a sliced fresh chilli to the cabbage. The avocado salsa will cool it.
