  4. 4

Warm the ready made corn tortillas (see the base recipe) in a dry pan or wrapped in foil in the oven.

  5. 5

Scatter the coriander over the eggs. Serve with the tortillas and your ready made classic guacamole (see the base recipe).

Tips

  • Raw pork chorizo must be fully cooked. Cut a piece open to check there is no pink inside.
  • Keep the heat gentle when the eggs go in. High heat makes rubbery eggs.
  • Pour off excess red fat from the pan if there is a lot, but leave a spoonful. It carries the flavour.

Storing and freezing

Best eaten fresh. Cool leftovers within 1 hour, keep in the fridge for up to 2 days and reheat until steaming hot all the way through.

Questions

Is Mexican chorizo the same as Spanish chorizo?

No. Mexican chorizo is a raw, soft, vinegar and chilli spiced pork that you cook from raw. Spanish chorizo is a cured, smoked, firm sausage that you slice and eat as it is.

Can I use shop bought chorizo?

Yes, use raw Mexican style chorizo if you can find it. If not, fry diced cooking chorizo instead, and reduce the salt in the eggs.

Is this dairy free?

Yes. There is no butter or cheese. Make sure the chorizo has no added dairy if you use shop bought.
