Method

  1. 1

Toss the cabbage with the lime juice and a pinch of salt in a bowl. Leave for 10 minutes while you cook, until slightly softened.

    10 min
  2. 2

Gently warm your ready made chipotle tinga sauce (see the base recipe) in a small pan, adding a splash of water if it is very thick.

  3. 3

Heat the oil in a large frying pan over a high heat. Cook the prawns for 2 to 3 minutes, turning once, until pink all over and cooked through with no grey.

    3 min
  4. 4

Add the warm sauce to the prawns and toss for 1 minute to coat. Take off the heat at once so the prawns do not toughen.

  5. 5

Warm the corn tortillas (see the base recipe) in a dry pan for 30 seconds each side.

  6. 6

Fill each tortilla with slaw, prawns and sauce, avocado, radish and coriander. Serve straight away.

Tips

  • Prawns need only a couple of minutes. As soon as they curl and turn pink and opaque, they are done.
  • Warm the sauce separately. Simmering prawns in it for a long time makes them rubbery.
  • Salt the cabbage so it softens slightly and takes up the lime juice.

Storing and freezing

Eat straight away. Keep any leftover prawns in the fridge for up to 1 day and eat only if they were cooled quickly, reheated until steaming hot all the way through.

Questions

Can I use cooked prawns?

Yes. Add cooked prawns to the warm sauce for just 2 minutes to heat through. Do not boil them or they will toughen.

Can I use fish instead?

Yes. Chunks of firm white fish such as cod or haddock pan fry in about 4 minutes and take the sauce well.

Are they free from the main allergens?

They are gluten free, dairy free, egg free and nut free as written, but they contain shellfish. Check that the tortillas and tinned chipotles are labelled gluten free.
