Method
- 1
Use your ready made salsa verde (see the base recipe). Heat the oil in a wide pan over a medium heat and soften half the onion for 3 minutes.
3 min - 2
Pour in the salsa verde and bring to a gentle simmer.
- 3
Break the pork scratchings into bite sized pieces and stir them into the sauce. Simmer for 6 to 8 minutes, stirring now and then, until the crackling has softened but is still chewy and the sauce is thick.
7 min - 4
Meanwhile, warm the refried beans (see the base recipe) in a small pan with a splash of water for 4 minutes until steaming hot all the way through.
4 min - 5
Warm your ready made corn tortillas (see the base recipe) in a dry pan for 20 to 30 seconds a side.
- 6
Spread each tortilla with refried beans, spoon over the chicharron in salsa, and top with the remaining onion and coriander. Serve with lime wedges.
Tips
- Choose plain, salted or unflavoured pork scratchings with no seasoning. Flavoured ones add flavours that clash and may contain gluten.
- The chicharron should soften but still have some chew. If it goes completely soft, you simmered it too long.
- Taste before adding salt, as the scratchings are already salty.
- Add a few drops of vinegar to the sauce if it tastes flat.
Storing and freezing
Best eaten fresh as the crackling keeps softening. Keeps in the fridge for up to 2 days, reheated in a pan until steaming hot all the way through.
