  2. 2

  3. 3

Warm your ready made corn tortillas (see the base recipe) in a dry pan or microwave until pliable. Spoon 2 tbsp chicken onto each, roll up tightly and secure with a cocktail stick.

  4. 4

Heat the oil in a wide frying pan to a medium high heat. Fry the rolls seam side down in batches for 2 to 3 minutes per side until golden and crisp.

    6 min
  5. 5

Drain on kitchen paper and remove the sticks.

  6. 6

Serve three per person on a bed of lettuce, with warm salsa verde (see the base recipe) spooned over, soured cream and queso fresco.

Tips

  • Soft tortillas roll without cracking. If yours tear, wrap them in a damp tea towel in the microwave for 20 seconds.
  • Fry in oil that sizzles around a test piece of tortilla. Too cold and the rolls turn greasy.
  • To bake instead, brush with oil and bake at 220C for 15 to 18 minutes, turning once.

Storing and freezing

Best eaten fresh. Cool leftovers within 2 hours, refrigerate for up to 2 days, and re-crisp in a {t200} oven until steaming hot all the way through.
