Method

  1. 1

Heat the oil in a wide pan over a medium heat. Cook the onion for 4 minutes until soft, then add the garlic for 1 minute.

    5 min
  2. 2

Add your ready made salsa verde (see the base recipe) and 100 ml water. Bring to a simmer.

  3. 3

Add the pork scratchings, pressing them into the sauce. Simmer for 10 to 12 minutes, stirring, until they soften and the sauce has thickened.

    12 min
  4. 4

Taste and add salt only if needed, as scratchings are already salty.

  5. 5

Warm your homemade flour tortillas (see the base recipe) in a dry pan for 15 seconds a side.

  6. 6

Spoon the chicharron into the tortillas, scatter with coriander and serve with lime wedges.

Tips

  • Plain unflavoured pork scratchings are a UK stand in for soft fried pork rind, or chicharron prensado.
  • Taste before adding salt. The scratchings and the salsa both carry salt.
  • Use a wide pan so the salsa reduces and clings.
  • Add a handful of cooked potato cubes to stretch it into a heartier filling.

Storing and freezing

Keep in the fridge for up to 3 days and reheat until steaming hot all the way through. It does not freeze especially well because the crackling goes soft.

Questions

What is chicharron en salsa verde?

A Mexican home cooking guisado: fried pork rind simmered in green salsa until it softens and becomes chewy and rich. It is a popular taco filling in taquerias and fondas.

Can I use something other than pork scratchings?

Pork belly cubes, fried until crisp and simmered the same way, work but take longer. Mushrooms give a vegetarian version, although the flavour is very different.

How spicy is it?

As spicy as your salsa verde. Add a sliced serrano chilli to the sauce for extra heat.
