Method

  1. 1

Make your agua fresca syrup (see the base recipe) in advance and chill it.

  2. 2

Rub the rims of four glasses with lime and dip in chilli powder, then drizzle 1 tbsp of lime juice around the inside of each glass.

  3. 3

Blend the frozen mango with 200 ml of the ready made agua fresca syrup (see the base recipe), the lime juice and the chilli powder until thick and smooth. Add a splash of cold water only if needed.

  4. 4

Pour into the glasses and swirl in the rest of the lime juice.

  5. 5

Top with diced fresh mango and serve at once with a spoon and a straw.

Tips

  • Use frozen mango chunks so the slush is thick and cold without watering down.
  • Chamoy is a sweet, sour and spicy Mexican sauce sold online and in Latin food shops. Mix lime juice, chilli powder and a little tamarind paste for a quick swap.
  • Rim the glasses with chilli lime seasoning for the full Mexican street style.
  • Eat with a spoon and a straw.

Storing and freezing

Best drunk right away. Freeze leftovers in lolly moulds for up to 1 month.
