Method

  1. 1

Warm the pollo deshebrado (see the base recipe) in a small pan with 2 tablespoons of water for 3 minutes until steaming hot all the way through.

    3 min
  2. 2

Lay a flour tortilla (see the base recipe) on a board. Cover with a quarter of the cheese, a quarter of the ham and a quarter of the chicken, then top with a second tortilla.

  3. 3

Brush the pan with a little oil and heat to medium. Cook each sincronizada for 3 minutes on the first side, pressing down with a spatula, then flip and cook for 2 to 3 minutes until crisp and the cheese oozes.

    5 min 30 s
  4. 4

Repeat for 4 sincronizadas, keeping the cooked ones warm in a low oven.

  5. 5

Cut into wedges and serve with avocado, tomato and lime wedges.

Tips

  • Press down firmly with a spatula so the tortillas seal and brown evenly.
  • A little cheese at the edges glues the tortillas together as it melts.
  • Use a cheese that melts well, such as mozzarella or Oaxaca. Aged cheddar goes oily.

Storing and freezing

Eat straight away. Keep cooked ones for up to 2 days in the fridge and reheat in a dry pan until steaming hot all the way through.

Questions

What is the difference between a quesadilla and a sincronizada?

A sincronizada is two tortillas stacked with ham and cheese, like a sandwich. A quesadilla is one tortilla folded over cheese.

Can I use corn tortillas?

Use wheat flour tortillas for a sincronizada since corn tortillas crack when stacked and pressed. Gluten free wraps also work.

Can I add salsa?

Serve with a spoonful of green or red salsa for dipping.
