Method
- 1
Warm your ready made refried beans (see the base recipe) in a small pan with a splash of water for 4 minutes, stirring, until hot and spreadable.
4 min - 2
Mix the warm rice with the spring onions and a squeeze of lime juice.
- 3
Warm each of your homemade flour tortillas (see the base recipe) in a dry pan for 15 seconds a side so they bend without cracking.
0 min 30 s - 4
Spread about 2 tablespoons of beans down the middle of each tortilla. Add a spoonful of rice and a generous handful of cheese, leaving a 4 cm border.
- 5
Fold in the two sides, then roll up tightly from the bottom like a parcel.
- 6
Heat the oil in a large frying pan over a medium heat. Cook the burritos seam side down for 2 minutes, then turn and cook for 2 minutes more until golden and the cheese has melted.
4 min - 7
Serve hot with lime wedges and your favourite salsa.
Tips
- Warming the tortillas first stops them tearing when you roll. Steam from a damp tea towel in the microwave for 20 seconds also works.
- Do not overfill. Aim for about 90 g of filling per burrito so the sides fold in neatly.
- Searing the seam side down first glues the burrito shut without a toothpick.
- Add a spoonful of salsa taquera or hot sauce inside for more heat.
Storing and freezing
Wrap cooled burritos individually and keep in the fridge for up to 3 days, or freeze for up to 2 months. Reheat in a hot oven or pan until steaming hot all the way through.
Questions
Can I make these vegan?
Yes. Leave out the cheese and use 150 g of dairy free cheese, or add sliced avocado instead. The flour tortillas and refried beans in the base recipes are already vegan.
Can I freeze bean and cheese burritos?
Yes. Wrap each one in baking paper, then foil or a freezer bag, and freeze for up to 2 months. Defrost overnight in the fridge and reheat in a moderate oven for about 20 minutes until steaming hot all the way through.
What rice should I use?
Plain long grain rice works well, or use leftover Mexican red rice. Cool cooked rice quickly and use within a day, and reheat it only once.
