Method
- 1
Marinate the steak in your ready made carne asada marinade (see the base recipe) for 2 to 6 hours in the fridge. Throw away the used marinade.
- 2
Pat the steak dry and sear in a hot pan for 2 to 3 minutes each side. Rest for 5 minutes, then slice thinly.
6 min - 3
Warm the refried beans (see the base recipe) in a small pan with a splash of water.
- 4
Heat the oil in a frying pan over a medium high heat and fry the eggs for 2 to 3 minutes until the edges are crisp and the yolks runny.
3 min - 5
Serve the steak, beans and eggs with warmed tortillas, avocado, tomato and lime wedges.
Tips
- Fry the eggs in hot oil so the whites bubble and crisp at the edges.
- Use skirt or flank cut thin so it cooks in minutes.
- Add a spoonful of salsa taquera for heat.
Storing and freezing
Best eaten straight away. Keep cooked steak in the fridge for up to 3 days, cooled within 1 to 2 hours, and reheat until steaming hot all the way through.
