Method
- 1
Heat 1 tablespoon of the oil in a large frying pan over a high heat. Add the mushrooms and cook for 8 minutes, stirring now and then, until deeply browned and dry.
8 min - 2
Add the garlic, chilli and oregano and cook for 1 minute until fragrant. Season with salt and take off the heat.
1 min - 3
Lay a tortilla on a board and scatter a quarter of the cheese on one half. Top with a quarter of the mushrooms and fold the tortilla over. Make four in total.
- 4
Heat the remaining oil in a clean frying pan over a medium heat. Cook the quesadillas for 2 minutes a side until golden and the cheese has melted.
4 min - 5
Cut into wedges and serve with your ready made salsa verde (see the base recipe) for dipping.
Tips
- Let the mushrooms brown fully before adding garlic, which burns quickly.
- Squeeze a little lime into the mushrooms at the end to lift the flavour.
- Use a mixture of mushrooms for more depth, such as oyster and chestnut.
- Add a little crumbled queso fresco or feta inside for salt and tang.
Storing and freezing
Keep any leftovers in the fridge for up to 2 days and reheat in a hot pan until steaming hot all the way through.
Questions
Can I make these vegan?
Yes. Use a dairy free melting cheese, and check that the flour tortillas have no dairy. The mushrooms, garlic and salsa verde are vegan.
Can I prepare the mushroom filling ahead?
Yes. Cook it up to 2 days ahead, cool quickly and chill. Reheat gently before filling the tortillas.
What cheese works best?
Mozzarella is easy to find and melts well. Oaxaca cheese is the Mexican choice and available in some UK shops, or use Monterey Jack.
