  3. 3

Warm the flour tortillas (see the base recipe) one at a time in a dry pan for 20 seconds each side, then stack them in a clean tea towel.

  4. 4

Spoon a line of chicken korma down the middle of each tortilla. Add cucumber, lettuce, coriander and a few of your ready made pickled red onions (see the base recipe).

  5. 5

Fold in the sides and roll up tightly. Cut in half and serve warm.

Tips

  • Reduce the sauce well. A loose sauce makes the wrap leak and go soggy.
  • The sharp pickled onions cut through the mild creaminess. Use plenty.
  • Wrap tightly in baking paper for a lunchbox. Eat within a few hours or keep cold.

Storing and freezing

Keep the filling in the fridge for up to 2 days and assemble the wraps fresh. The filling reheats well until steaming hot.

Questions

Can I make these gluten free?

Yes. Use gluten free tortillas or the corn tortillas from the corn tortilla recipe, and keep the rest as written.

Can I use leftover roast chicken?

Yes. Use 400 g cooked chicken and simmer it with the sauce for 3 minutes.

Can I make a vegan version?

Yes. Use chickpeas or pressed tofu instead of chicken. The sauce, tortillas and pickled onions are all vegan.
