Method

  1. 1

Heat the oven to 180°C (160°C fan). Grease a 23 cm springform tin with the dairy free spread and line the base with baking paper.

  2. 2

Toss the apple slices with the lemon juice and cinnamon. Spread them evenly over the base of the tin.

  3. 3

Whisk the eggs, caster sugar and vanilla with an electric whisk for 8 to 10 minutes, until very pale, thick and tripled in volume. When you lift the whisk, the trail should sit on the surface for a few seconds.

  4. 4

Sift the flour, baking powder and xanthan gum over the egg mix. Fold in gently with a large spoon, in 3 goes, keeping in as much air as you can.

  5. 5

Pour the batter over the apples and tap the tin once on the work surface. Bake for 40 to 45 minutes, until the top is golden and a skewer in the sponge comes out clean.

  6. 6

Cool in the tin for 10 minutes, then release and turn out. Serve warm or cold, apple side up, sprinkled with a little sugar.
