Method

  1. 1

Boil the potatoes in their skins for 25 minutes and the carrots for 15 minutes, until tender. Drain and leave to cool completely. Peel everything.

  2. 2

Put the chopped onion in a small bowl, cover with boiling water for 1 minute, then drain and squeeze dry. This takes away the harsh bite.

  3. 3

Coarsely grate the potatoes, carrots, eggs and beetroot onto separate plates. Keep them separate.

  4. 4

Set a 22 cm round dish or springform ring on a serving plate. Spread the diced herring over the base and scatter with the onion.

  5. 5

Layer on the grated potato (press lightly, season with salt), then spread with a thin layer of mayonnaise. Then add the carrot with a thin layer of mayonnaise, then the egg with a thin layer of mayonnaise.

  6. 6

Finish with the beetroot, pressed gently, and spread the rest of the mayonnaise over the top and sides so the whole thing looks wrapped in a coat.

  7. 7

Cover and chill for at least 4 hours, ideally overnight. Remove the ring, scatter with dill and cut into slices to serve.
