Method

  1. 1

Heat the oven to 180°C (160°C fan). Heat the oil in a large ovenproof casserole dish over a medium heat and brown the sausages for 6 minutes, turning, then lift them out.

  2. 2

Add the onion and carrots to the dish and cook for 6 minutes until soft. Stir in the smoked paprika for 1 minute.

  3. 3

Add the beans, chopped tomatoes, stock and your ready made BBQ sauce (see the base recipe). Stir and bring to a simmer.

  4. 4

Nestle the sausages back into the sauce. Cover and bake for 30 minutes.

    30 min
  5. 5

Remove the lid and bake for 10 minutes more, until the sauce is thick and the sausages are cooked through, with no pink inside.

    10 min
  6. 6

Season to taste and serve with mash or crusty gluten free bread.

Tips

  • Browning the sausages first gives them flavour and colour, and helps them keep their shape in the sauce.
  • Use a gluten free stock cube or homemade stock and check your sausage label, as many contain rusk.
  • Add a handful of chopped kale or spinach in the last 5 minutes for extra greens.

Storing and freezing

Keeps 3 days in the fridge, cooled within 2 hours. Freeze for up to 3 months and reheat until steaming hot all the way through.

Questions

Can I use other beans?

Yes. Cannellini, butter beans or borlotti beans all work. Use tinned beans, drained and rinsed, or cook dried beans fully before adding.

Can I make it in a slow cooker?

Yes. Brown the sausages and onion first, then cook everything on low for 6 hours. Stir in a splash of water if it gets too thick.

Is it gluten free?

Yes, if you use sausages and stock labelled gluten free. The BBQ sauce is gluten free when made with gluten free tamari and mustard.
