Method
- 1
Heat the oven to 200°C (180°C fan). Rub the chicken with the olive oil and a pinch of salt, put in a small roasting tin and roast for 20 to 25 minutes, until cooked through with no pink and the juices run clear. Shred with two forks.
23 min - 2
Raise the oven to 250°C (230°C fan) and heat a heavy baking tray inside for 30 minutes.
- 3
Toss the shredded chicken with 80 ml of your ready made BBQ sauce (see the base recipe).
- 4
Divide your ready made pizza dough (see the base recipe) in half and stretch each piece to about 30 cm on baking paper dusted with semolina. Spread the remaining sauce thinly over the bases, leaving a 2 cm rim.
- 5
Scatter over half the mozzarella, then the chicken and red onion, then the rest of the cheese.
- 6
Slide onto the hot tray and bake for 8 to 10 minutes until the crust is golden and the cheese has browned in places. Scatter with coriander and serve.
10 min
Tips
- Spread the sauce thinly. It is sweet and strong, and too much drowns the cheese.
- Put cheese on both under and over the chicken, so it does not dry out in the high heat.
- Cooked leftover roast chicken or turkey works well here, and saves the roasting step.
Storing and freezing
Best the same day. Cool leftovers within 1 to 2 hours, keep covered in the fridge for up to 2 days and reheat until steaming hot all the way through.
Questions
Can I use shop bought BBQ sauce?
Yes, but choose a thick one. Thin sauces run off the base, so spread it lightly and check the label for gluten, as some contain malt vinegar or Worcestershire sauce.
Can I use pulled pork?
Yes. Use 250 g of cooked pulled pork instead of chicken and toss it with a little of the sauce first.
Can I make it ahead?
Cook and shred the chicken up to 2 days ahead and keep it chilled. Assemble and bake just before serving.
