Method

  1. 1

Drain the tofu and press it between kitchen paper under a heavy pan for 15 minutes. Cut into 8 thick slabs and pat dry.

  2. 2

Boil the potatoes in salted water for 15 minutes until soft. Add the green beans for the last 4 minutes. Drain both.

  3. 3

Mash the potatoes with the dairy free spread and soya milk until smooth. Season well and keep warm.

  4. 4

Dust the tofu in the cornflour. Heat the oil in a large non-stick frying pan over a medium high heat and fry the tofu for 3 to 4 minutes per side, until golden and crisp.

  5. 5

Pour your ready made BBQ sauce (see the base recipe) into the pan and turn the tofu for 2 minutes, until sticky and glossy.

  6. 6

Serve the tofu on the mash with the green beans and any sauce from the pan.

Tips

  • Pressing the tofu is worth the wait, as it lets the surface get crisp and take up the sauce.
  • Use extra firm tofu, not silken. Silken breaks apart in the pan.
  • Add a splash of water to the pan if the sauce catches before the tofu is glazed.

Storing and freezing

Keeps 3 days in the fridge; reheat in a hot oven or pan until steaming hot all the way through. The tofu is best crisp, so store the mash separately.

Questions

Can I bake the tofu instead?

Yes. Bake the cornflour-dusted slabs at 220C for 25 minutes, turning once, then brush with the sauce and bake 8 minutes more.

Is this dish vegan and gluten free?

Yes. The BBQ sauce, tofu, spread and soya milk are all vegan, and nothing here contains gluten. Check your spread and tofu labels.

Can I use tempeh instead?

Yes. Slice 400 g tempeh, steam for 10 minutes to soften any bitterness, then fry and glaze in the same way.
