Method
- 1
Heat the oven to 200°C (180°C fan). Line a baking tray with baking paper.
- 2
Pat the salmon dry and put skin side down on the tray. Spread your ready made guajillo adobo paste (see the base recipe) over the top and sides of each fillet.
- 3
Bake for 12 to 14 minutes, until the salmon is opaque, flakes easily and is cooked through.
13 min - 4
While the salmon bakes, boil the green beans in salted water for 4 minutes until just tender, then drain and toss with the oil.
4 min - 5
Stir your ready made creamy avocado salsa (see the base recipe) and spoon some onto each plate.
- 6
Rest a salmon fillet on the salsa with the green beans alongside, top with your ready made pickled red onions (see the base recipe), coriander leaves and a lime wedge.
Tips
- Pat the salmon dry so the paste sticks and forms a crust rather than sliding off.
- Do not overbake. Salmon is best when just opaque and moist in the centre.
- Use a thin layer of paste. It is very concentrated and a thick coat can taste sharp.
Storing and freezing
Best eaten fresh. Cool leftover salmon within 1 hour and keep in the fridge for up to 1 day. Flake into a salad cold, or reheat until steaming hot all the way through.
Questions
Can I use other fish with this adobo?
Yes. Trout, sea bass, cod or even chunks of monkfish work. Adjust the baking time by thickness.
Can I cook the salmon in a pan?
Yes. Fry skin side down in a hot non stick pan for 5 minutes, flip, and cook for 2 to 3 minutes. The paste can scorch, so use a medium heat.
Is this recipe low carb?
The fish, avocado salsa and green beans contain no added starch or sugar, so it is a low carb dinner. Serve without rice or tortillas.
