Method
- 1
Make your agua fresca syrup (see the base recipe) in advance and chill it.
- 2
Lightly bruise half the mint leaves in the bottom of a large jug with the back of a spoon.
- 3
Pour in 200 ml of the ready made agua fresca syrup (see the base recipe), the cold water and the lime juice. Stir well.
- 4
Taste and add more water or syrup to suit.
- 5
Put the pineapple chunks, ice and remaining mint in glasses and pour over the agua fresca. Serve at once.
Tips
- Add the pineapple chunks to the glass for a fruity bite at the end.
- Muddle the mint gently. Over bruising it releases bitter flavours.
- A pinch of salt makes the fruit taste sweeter and more rounded.
- Try it with sparkling water for a fizzy Mexican style soda.
Storing and freezing
Best fresh. Keep covered in the fridge for up to 24 hours and stir before serving.
Questions
Can I use tinned pineapple?
The syrup already gives the pineapple flavour. If you add pineapple pieces, use fresh or tinned in juice, drained well.
Can I make it ahead for a party?
Yes. Mix the syrup and water in a jug up to a day ahead, and add the ice and mint just before serving.
Is it alcohol free?
Yes. It contains no alcohol, though you could add a splash of tequila for adults.
