Method

  1. 1

Toss the prawns with your ready made carne asada marinade (see the base recipe) and chill for 20 to 30 minutes. Do not leave longer or the citrus will cook them. Discard the leftover marinade.

  2. 2

Warm the corn tortillas (see the base recipe) in a dry pan and wrap them in a clean tea towel to keep soft.

  3. 3

Heat the oil in a frying pan or griddle until very hot. Cook the prawns for 1 to 2 minutes each side until pink and curled.

    4 min
  4. 4

Spread a spoonful of creamy avocado salsa (see the base recipe) over each tortilla.

  5. 5

Add cabbage and 3 to 4 prawns to each, then top with coriander and serve with lime wedges.

Tips

  • Keep marinating time short. Prawns turn rubbery if they sit in citrus.
  • Cook in 2 batches if your pan is small, so the prawns sear and do not steam.
  • Use shredded cabbage for crunch in place of lettuce.

Storing and freezing

Best eaten at once. Cooked prawns keep in the fridge for up to 1 day if cooled quickly, and should be eaten cold or reheated until steaming hot.

Questions

Can I use frozen prawns?

Yes. Defrost them fully in the fridge, drain and pat very dry before marinating, otherwise they release water and will not sear properly.

Are these tacos dairy free and gluten free?

Yes, as long as your corn tortillas are pure masa. The prawns, marinade, cabbage and avocado salsa contain no gluten, dairy, egg or nuts.
