  3. 3

Add the garlic and sweetcorn and cook for 3 minutes, then stir in the poblano strips, salt and half the lime juice. Cook for 2 more minutes.

  4. 4

Put your ready made cilantro lime rice (see the base recipe) in a pan with 3 tbsp water, cover and heat for 5 to 6 minutes until steaming hot all the way through.

  5. 5

In another pan, warm your ready made Mexican black beans (see the base recipe) with their broth for 5 minutes until steaming hot all the way through.

  6. 6

Spoon the rice into bowls, add the beans, then the rajas. Top with avocado and the rest of the lime juice.

Tips

  • Charring the peppers well gives the rajas a smoky flavour. Let them steam under a plate so the skins slide off.
  • Stir in the lime juice at the end. Cooking it for a long time dulls the flavour.
  • Add a spoonful of crumbled queso fresco or a drizzle of crema if you are not vegan.

Storing and freezing

Cool within 1 hour and keep in the fridge for up to 3 days, with the avocado added fresh. Reheat only once until steaming hot all the way through. The rajas and beans freeze for up to 1 month without the rice.

Questions

What are rajas?

Rajas are strips of roasted chilli, usually poblano, cooked with onion. They appear in tacos, quesadillas and stews, and are traditionally made with cream and cheese.

Can I use jarred roasted peppers?

Yes, if you cannot roast your own. Use jarred roasted red or green peppers, drained well, and add a fresh chopped green chilli for heat.

Is this filling enough for a main meal?

Yes. The black beans and rice make a satisfying meal, and the avocado adds richness.
