Method

  1. 1

Squeeze the drained jackfruit to remove extra water. Cut off the hard cores and pull the rest apart with your fingers into shreds.

  2. 2

Heat the oil in a large frying pan and fry the jackfruit for 8 minutes until the edges colour, then add the onion and cook for 4 minutes.

  3. 3

Add your ready made chipotle tinga sauce (see the base recipe) and 100 ml of water. Simmer for 10 minutes, mashing the jackfruit lightly with a spoon until it is soft and the sauce is thick.

  4. 4

Reheat your ready made cilantro lime rice (see the base recipe) and your Mexican black beans (see the base recipe) until steaming hot all the way through.

  5. 5

Divide the rice and beans between four bowls. Top with the jackfruit tinga, lettuce and avocado.

  6. 6

Finish with coriander and a squeeze of lime from the wedges.

Tips

  • Buy jackfruit in water or brine, not in syrup. Syrup makes the dish sweet and sticky.
  • Rinse jackfruit really well. The brine can taste sharp and salty if left on.
  • For a more meaty texture, fry the shredded jackfruit until browned before adding the sauce.

Storing and freezing

Keep the jackfruit tinga, rice and beans in separate tubs in the fridge for up to 3 days. Reheat until steaming hot all the way through and reheat rice only once.

Questions

Is jackfruit tinga vegan?

Yes. Young green jackfruit, vegetable stock based tinga sauce, lime rice and black beans are all plant based when made as in the base recipes.

Can I use ripe jackfruit?

No. Ripe jackfruit is sweet and soft and tastes wrong here. Use tins labelled young or green jackfruit in water or brine.

What can I use instead of jackfruit?

King oyster mushrooms or shredded cooked butternut squash both suit this sauce. Cook mushrooms until golden before adding the tinga.
