Method
- 1
Season the steak with salt. Heat half the oil in a heavy frying pan over a high heat and cook the steak for 3 to 4 minutes per side. Rest for 5 minutes, then chop small.
7 min - 2
Using the same pan, fry your ready made Mexican chorizo (see the base recipe) for 8 to 10 minutes, breaking it up, until cooked through with no pink left.
9 min - 3
Return the chopped steak to the pan with the chorizo and cook for 2 minutes, mixing, until the steak is hot and coated in red fat.
2 min - 4
Warm the ready made corn tortillas (see the base recipe) in a dry pan.
- 5
Fill with the meat mixture, top with onion and coriander. Serve with lime and your ready made salsa taquera (see the base recipe).
Tips
- Cook the steak before the chorizo, then reunite them in the pan so the steak does not overcook.
- Pat the steak dry before it goes in so it sears.
- Campechano means mixed or country style: any combination of meats works, including pastor or longaniza.
Storing and freezing
Keep leftovers in the fridge for up to 3 days. Reheat until steaming hot all the way through.
