Method
- 1
Heat the oil in a large frying pan over a high heat. Cook the peppers and onion with the fajita seasoning mix (see the base recipe) for 8 minutes, stirring, until soft and charred at the edges.
8 min - 2
Warm your Mexican black beans (see the base recipe) in a small pan with a splash of their cooking liquid. Mash roughly with a fork so about half the beans stay whole.
5 min - 3
If your tostadas (see the base recipe) have gone soft, crisp them in the oven at 180°C (160°C fan) for 4 minutes.
4 min - 4
Spread a generous layer of the warm beans over each tostada.
- 5
Top with the pepper mixture, shredded lettuce and avocado slices.
- 6
Finish with lime juice and coriander. Eat straight away, as tostadas soften as they sit.
Tips
- Spread the warm beans right to the edges of the tostada. They act as a seal that keeps the toppings from making it soggy.
- Assemble just before eating. Tostadas stay crisp for only a few minutes once loaded.
- Add a spoonful of pickled red onions or a dash of hot sauce for sharpness and heat.
- Mashing half the beans gives a spreadable base while keeping some texture.
Storing and freezing
Keep the beans and pepper filling separately in the fridge for up to 3 days, cooled within 1 to 2 hours. Reheat until steaming hot and assemble onto fresh tostadas. Do not store assembled tostadas.
Questions
What is a tostada?
A tostada is a flat corn tortilla that has been fried or baked until crisp, then used as a base for toppings. The name means toasted in Spanish.
Can I use tinned beans?
Yes. Drain and rinse a 400 g tin, then warm with a splash of water, a pinch of cumin and a little of the fajita mix. They will not taste quite as rich as homemade but work well.
Are tostadas vegan and gluten free?
Plain corn tostadas are usually both, but check the label as some shop bought ones are fried in animal fat or contain wheat flour. Homemade ones from the base recipe are vegan and gluten free.
