Method
- 1
Put the steak in a shallow dish and coat it with your ready made carne asada marinade (see the base recipe). Marinate in the fridge for at least 1 hour, or up to 12 hours.
60 min - 2
Heat a heavy frying pan or griddle until smoking hot. Wipe off excess marinade and add the oil, then sear the steak for 2 to 3 minutes a side for medium. Rest for 5 minutes.
6 min - 3
Slice the steak thinly against the grain, then chop the slices into bite sized pieces.
5 min - 4
Warm your homemade flour tortillas (see the base recipe) in a dry pan for 15 seconds a side.
- 5
Layer rice, steak, cheese, avocado and a good spoonful of your fresh pico de gallo (see the base recipe) down the middle of each tortilla.
- 6
Fold in the sides, roll tightly and toast seam side down in the dry pan for 1 minute to seal.

Tips
- Do not marinate the steak for more than 12 hours or the acid will make the surface mushy.
- Slice against the grain in thin strips. Skirt steak is chewy if sliced thickly or with the grain.
- Pat the steak dry before searing so you get a dark crust rather than steaming.
- Throw away any leftover raw marinade rather than using it as a sauce.
Storing and freezing
Keep assembled burritos wrapped in the fridge for up to 2 days. Keep the cooked steak separate and use within 3 days. Reheat until steaming hot all the way through.
Questions
What cut of steak is best?
Skirt steak is the classic choice for carne asada because it has deep flavour. Flank steak or bavette also work. Cook them hot and fast, and slice thin.
Can I cook it on a barbecue?
Yes. Grill the marinated steak over hot coals for 2 to 3 minutes a side, rest for 5 minutes and slice. The smoky flavour is closer to how it is made in Mexico.
Can I make this dairy free?
Yes, simply leave out the cheese. The flour tortillas, marinade, pico de gallo and avocado contain no dairy.
