Method
- 1
Heat half the oil in a frying pan over a high heat. Cook the prawns and garlic for 2 to 3 minutes, stirring, until pink and opaque all the way through. Stir in the coriander and a squeeze of lime. Tip into a bowl.
3 min - 2
Warm your ready made corn tortillas (see the base recipe) in a dry pan for 15 seconds a side so they bend without cracking.
- 3
Scatter cheese over half of each tortilla, add a spoonful of prawns, then more cheese. Fold over to make a half moon and press down.
- 4
Heat the rest of the oil in a clean frying pan over a medium heat. Cook the quesadillas in batches for 2 to 3 minutes a side, pressing with a spatula, until golden and the cheese has melted.
5 min - 5
Cut each in half and serve with the pico de gallo, lime crema (see the base recipe) and lime wedges.
Tips
- Chop the prawns small so they sit flat and cook through quickly.
- Do not overfill. A thin layer of cheese and prawns seals the edges and makes it easier to flip.
- Keep the pan on a medium heat, not high, so the cheese melts before the outside burns.
- Eat straight away while crisp.
Storing and freezing
Best eaten fresh. Keeps in the fridge for up to 1 day. Reheat in a dry pan until steaming hot all the way through. Do not freeze.
Questions
Which cheese is best?
Oaxaca cheese melts into long strings and is the classic choice. Mozzarella is the best UK swap. Mild cheddar also works.
Can I make them with flour tortillas?
Yes, but they will not be gluten free. Corn tortillas give the traditional flavour and a crisper edge.
Are these quesadillas gluten free?
Yes. Prawns, cheese and masa harina tortillas contain no gluten, egg or nuts. They contain dairy and shellfish.
