Method

  1. 1

Heat the oil in a large frying pan over a high heat. Cook the mushrooms for 6 to 8 minutes until browned and the liquid has cooked away.

    7 min
  2. 2

Add the onion and fajita seasoning mix (see the base recipe) and cook for 4 minutes until soft and fragrant. Stir in the coriander and tip into a bowl.

    4 min
  3. 3

Warm your corn tortillas (see the base recipe) in a dry pan for 20 seconds on each side so they bend without cracking.

  4. 4

Fill each tortilla with cheese and a spoonful of the mushroom mixture on one half, then fold over to make a half moon.

  5. 5

Cook in a dry or lightly oiled frying pan over a medium heat for 2 to 3 minutes on each side, pressing gently, until golden and the cheese has melted.

    5 min
  6. 6

Serve with your salsa verde (see the base recipe) for dipping.

Tips

  • Cook the mushrooms until the pan is dry. Wet filling makes the tortillas soggy and tear.
  • Oaxaca cheese is traditional and stretchy. Vegetarian mozzarella is the easiest UK swap.
  • Use freshly warmed tortillas; cold corn tortillas crack when folded.
  • For dairy free, use a good dairy free melting cheese and check it is nut free.

Storing and freezing

Best eaten fresh. Keep leftovers in the fridge for up to 2 days, cooled within 1 to 2 hours, and reheat in a hot pan until steaming hot in the middle.

Questions

Is this recipe gluten free?

Yes, as long as the tortillas are made only from masa harina. This recipe is also egg free and nut free, and vegetarian when you use vegetarian mozzarella.

Can I use shop bought tortillas?

Yes. Choose soft corn tortillas 15 to 18 cm wide and check the label for wheat. Warm them well before folding.

Can I prepare the filling ahead?

Yes. The cooked mushroom mixture keeps in the fridge for up to 3 days. Cool it quickly, then assemble and cook the quesadillas just before serving.
