Method

  1. 1

Heat the oil in a large saucepan over a medium heat. Cook the carrots and celery for 5 minutes until just soft. Add the garlic for 30 seconds.

    5 min
  2. 2

Add the lentils, bay leaf, water and your ready made salsa ranchera (see the base recipe). Bring to the boil, then reduce to a simmer.

  3. 3

Cook, partly covered, for 30 to 35 minutes, stirring now and then, until the lentils are tender and the stew is thick.

    35 min
  4. 4

Remove the bay leaf. Season with 1.5 tsp salt, adding it at the end so the lentils soften properly.

  5. 5

Ladle into bowls and top with your ready made pico de gallo (see the base recipe). Serve with lime wedges.

Tips

  • Add the salt at the end. Salting too early can toughen the lentil skins.
  • Add a little more water if it gets too thick.
  • A splash of lime juice at the end brightens the flavour.

Storing and freezing

Cool within 2 hours. Keep in the fridge up to 4 days or freeze up to 3 months. Reheat until steaming hot all the way through, adding a splash of water.
