Method
- 1
Warm the refried beans (see the base recipe) in a small pan over a low heat, stirring, for 4 to 5 minutes until steaming hot all the way through. Loosen with a splash of water if they feel stiff.
4 min 30 s - 2
Toss the lettuce with half the lime juice and a pinch of salt.
- 3
Sprinkle the sliced avocado with the rest of the lime juice and the flaked salt.
- 4
Spread a generous layer of hot beans over each tostada (see the base recipe), right to the edges. This forms a seal that keeps the tostada crisp.
- 5
Pile on lettuce, avocado and radish. Spoon over your ready made pico de gallo (see the base recipe) and serve straight away.
Tips
- Spread the beans right to the edge of each tostada. This acts as a barrier against moisture from the toppings.
- Eat them quickly after building. Tostadas soften within about 5 minutes once topped.
- Add pickled jalapeños or a drizzle of hot sauce for extra heat.
Storing and freezing
Best eaten straight away. Keep leftover warm beans in the fridge for up to 4 days and reheat until steaming hot all the way through. Do not store assembled tostadas.
Questions
Are these tostadas vegan?
Yes, as long as your refried beans are made without lard, as in the base recipe. Beans, avocado, lettuce, radish, lime and pico de gallo are all plant based.
Can I serve them as a starter?
Yes. Use smaller tostadas or break larger ones in half for finger food. Top just before serving so they stay crisp.
Can I use tinned beans for the refried beans?
Yes, but the base recipe gives a better flavour. In a hurry, mash a drained tin of pinto beans in a hot pan with oil, onion, garlic and a splash of the liquid.
