  2. 2

Pour your ready made green mole, pipian verde (see the base recipe) into a wide pan with the 100 ml water. Warm over a low heat for 5 minutes.

  3. 3

Slide in the fish fillets in a single layer, spoon sauce over them and cover. Cook very gently for 6 to 8 minutes until the fish is opaque and flakes easily.

  4. 4

Spoon your ready made pico de gallo (see the base recipe) over the fish just before serving.

  5. 5

Serve with the rice, the sauce spooned over and lime wedges.

Tips

  • Keep the sauce at a bare simmer. Fast boiling breaks up the fish and can split the sauce.
  • Use thick, even fillets so they cook at the same pace.
  • Do not stir after adding the fish. Spoon sauce over it instead.

Storing and freezing

Best fresh. Cool leftovers within 1 hour and keep for 1 day in the fridge, then reheat gently until steaming hot all through.

Questions

What fish works best?

Firm white fish such as hake, cod, haddock or pollock. Salmon also works but gives a richer result.

Can I use frozen fish?

Yes, defrost fully in the fridge overnight, then dry it well before cooking.

Is it very hot?

No, it is medium. The pico de gallo adds fresh heat, so leave out the chilli there if you want it milder.
