Method

  1. 1

Pat the prawns very dry. Mix in a bowl with 1 tbsp oil, the smoked paprika, garlic, half the lime juice and a pinch of salt.

  2. 2

Warm the corn tortillas (see the base recipe) one at a time in a dry pan for 20 seconds a side, then wrap in a clean tea towel to keep soft.

  3. 3

Heat the remaining oil in a large frying pan over a high heat. Cook the prawns for 2 to 3 minutes, turning once, until pink and just cooked through.

  4. 4

Toss the shredded cabbage with the rest of the lime juice and a pinch of salt.

  5. 5

Fill each tortilla with cabbage, prawns and a spoonful of your ready made pico de gallo (see the base recipe). Drizzle with your ready made elote sauce (see the base recipe) and serve with lime wedges.

Tips

  • Do not crowd the pan or the prawns steam. Cook in two batches if needed.
  • Prawns are done when they curl into a loose C and turn pink, a tight O means overcooked.
  • Warm tortillas wrapped in a tea towel stay soft and fold without splitting.
  • Use raw prawns for the best flavour. Pre cooked prawns only need 1 minute to warm through.

Storing and freezing

Eat straight away. Cool leftover prawns within 1 hour and keep in the fridge for up to 1 day. Reheat once, quickly, until steaming hot. Do not freeze cooked prawns.

Questions

Can I use frozen prawns?

Yes. Defrost them fully in the fridge overnight, then pat them very dry before cooking.

Can I make these dairy free?

Yes. Use the dairy free elote sauce swap from the base recipe, or skip the sauce and add more pico de gallo and avocado.

What fish works instead of prawns?

Firm white fish such as cod, cut into strips and cooked for 3 to 4 minutes, makes good tacos in the Baja style.
