Method

  1. 1

Heat the oil in a frying pan over a medium heat. Fry your ready made chorizo mexicano (see the base recipe) for 8 to 10 minutes, breaking it up, until cooked through and slightly crisp.

  2. 2

Drain the chorizo on kitchen paper to remove excess fat.

  3. 3

Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.

  4. 4

Stir three quarters of the chorizo into the queso.

  5. 5

Pour the dip into a warm bowl, top with the rest of the chorizo, the pico de gallo (see the base recipe) and the coriander.

  6. 6

Serve at once with the tortilla chips for dipping.

Tips

  • Drain the chorizo fat well or the queso will look oily.
  • Serve the dip in a pre-warmed bowl or small slow cooker on low to keep it fluid for longer.
  • Add a few extra chopped jalapeños for more heat.

Storing and freezing

Cool within 1 to 2 hours and keep in the fridge for up to 2 days. Reheat gently with a splash of milk, stirring, until steaming hot all the way through. Do not freeze.

Questions

Can I make it ahead?

Yes. Make the chorizo and queso a day ahead and gently reheat just before serving. Add the pico de gallo at the last minute.

Is it gluten free?

Yes, with gluten free cornflour in the queso and corn tostadas. It is also egg free and nut free, but contains dairy and pork.

Is this a Mexican dish?

Chile con queso is a Tex-Mex dish. In northern Mexico a similar dish called queso fundido uses stringy melted cheese with chorizo.
