Heat half of the oil in a non stick frying pan over a medium high heat. Fry the paneer for 5 minutes, turning, until golden on all sides. Sprinkle with the chilli powder and a pinch of salt.
5 min - 2
Pour in your ready made saag spinach base (see the base recipe) and simmer for 4 minutes until thick enough to hold on a spoon. Stir in the lemon juice.
4 min - 3
Warm the chapatis one by one in a dry frying pan for 20 seconds each side, until soft and flecked. Keep them wrapped in foil.
0 min 40 s - 4
Spoon the paneer and saag down the middle of each chapati. Top with your pickled red onions (see the base recipe) and the cucumber.
- 5
Roll tightly, wrap the bottom in foil or baking paper and serve straight away.
Tips
- Reduce the sauce until it is thick, or the wrap will leak.
- Warm the paneer in the pan so it is soft, not rubbery.
- Swap the chapatis for gluten free wraps or serve as a rice bowl for a gluten free version.
Storing and freezing
Best eaten fresh. Keep the filling for 2 days in the fridge and warm the filling until steaming hot all the way through before filling fresh chapatis.
