  3. 3

Add the chickpeas, coconut milk, tamari, tamarind and palm sugar and simmer for 8 minutes until thick.

  4. 4

Stir in the spinach until wilted and add the lime juice. Taste and adjust.

  5. 5

Split the sweet potatoes open and fluff the insides with a fork.

  6. 6

Spoon in the curry and top with your ready made pickled red onions (see the base recipe) and coriander. Serve straight away.

Tips

  • Sweet potatoes bake faster if you microwave them for 5 minutes first.
  • Keep the curry thick so it stays in the potato rather than running onto the plate.
  • The pickled onions cut through the sweetness, so do not skip them.

Storing and freezing

Keep the curry and baked potatoes separately. Cool within 1 to 2 hours and keep in the fridge for up to 3 days. Reheat until steaming hot all the way through. Freeze the curry for up to 3 months.

Questions

Can I microwave the sweet potatoes?

Yes, microwave for 8 to 10 minutes until soft, turning once. They will be less crisp-skinned than oven baked.

Can I use regular potatoes?

Yes, large baking potatoes work but need about 1 hour 15 minutes at the same temperature.

Is this vegan?

Yes, when the paste is made without shrimp paste and the pickled onions are vegan.
