Method

  1. 1

Mix the mince with the smoked paprika and 0.5 tsp salt without overworking it. Shape into 4 patties about 2 cm thick and press a dip into the middle of each. Chill for 10 minutes.

  2. 2

Heat half the oil in a frying pan over a high heat. Cook the dry sweetcorn for 6 to 8 minutes until charred, then tip into a bowl and stir in 3 tbsp of the elote sauce (see the base recipe).

    7 min
  3. 3

Wipe the pan, add the rest of the oil and cook the burgers on a medium high heat for 4 minutes on the first side. Turn, add the cheese and cook for 4 to 5 minutes more, until there is no pink in the middle and the juices run clear.

    9 min
  4. 4

Toast the cut sides of the buns in a dry pan for 1 minute.

  5. 5

Spread the rest of your ready made elote sauce on the bun bases. Add lettuce, a burger, a pile of the corn and your ready made pickled red onions (see the base recipe), then the lids.

Tips

  • Press a small dimple into each patty so it cooks flat and does not dome.
  • Use mince with some fat, 15% is ideal. Very lean mince makes a dry burger.
  • Cook burgers until no pink remains in the centre, because minced beef must be cooked through.
  • Make a veggie version with a black bean patty and halloumi.

Storing and freezing

Best eaten fresh. Cool leftover cooked patties within 1 hour and keep in the fridge for up to 2 days. Reheat until steaming hot all the way through. Freeze raw patties for up to 3 months.

Questions

Can I use turkey or chicken mince?

Yes, but cook thoroughly until no pink remains. Add 1 tbsp oil to the mixture as poultry mince is leaner.

Can I cook the burgers on the barbecue?

Yes. Cook them over medium hot coals for 5 to 6 minutes a side, with the lid down, until the juices run clear.

How do I make these gluten free?

Use gluten free brioche style buns, and check the label on the cheese slices.
