Method
- 1
Heat the oil on the Sauté setting. Add the cumin seeds for 30 seconds, then the onions. Cook for 8 minutes, stirring, until golden. Add the garlic, ginger and green chilli for 1 minute.
8 min - 2
Add the tomatoes, turmeric, ground coriander and chilli powder with a splash of water. Cook for 4 minutes until the tomatoes collapse into a paste and the oil starts to separate.
4 min - 3
Stir in the rinsed beans, the water and 1 tsp salt. Scrape the bottom well.
- 4
Lock the lid and set the valve to sealing. Cook at high pressure for 20 minutes. It takes about 10 minutes to come up to pressure first.
20 min - 5
Let the pressure drop naturally for 10 minutes (natural release), then open the valve. Natural release keeps the bean skins whole, where quick release can split them.
10 min - 6
Mash a few spoonfuls of beans against the side of the pot to thicken the sauce. Stir in the garam masala and lemon juice and simmer on Sauté for 3 minutes if it is runny. Check the beans are soft, and if not, cook for 5 more minutes at pressure. Scatter with coriander.
- 7
No pressure cooker? Simmer in a covered pan for 1 hour 15 minutes to 1 hour 30 minutes until soft, topping up with hot water. Soaking overnight cuts this to about 45 minutes. Serve with rice or chapatis.
