Method
- 1
Heat the oil in a large pan over a medium heat. Cook the onions for 10 minutes, stirring, until soft and golden.
10 min - 2
Add the garlic and ginger and cook for 1 minute, then stir in the cumin, coriander, turmeric, chilli powder and garam masala for 30 seconds.
- 3
Add the tomato purée, tomatoes, water, sugar and salt. Bring to the boil and simmer for 10 minutes.
10 min - 4
Add the chicken, cover and simmer gently for 20 minutes, stirring now and then, until the chicken is cooked through with no pink and the sauce is thick.
20 min - 5
Stir in the lemon juice and half the coriander. Taste and add more salt, lemon or chilli if you like.
- 6
Cool within 1 hour and refrigerate. It keeps for 3 days in the fridge or 3 months in the freezer in portion tubs.
- 7
Defrost overnight in the fridge. Reheat in a pan for 10 minutes or microwave for 4 to 5 minutes, stirring halfway, until steaming hot all the way through. Reheat only once. Scatter over the remaining coriander.
