Method
- 1
Boil the potatoes in salted water for 8 minutes, until just tender. Drain and leave to steam dry.
8 min - 2
Heat 1 tbsp oil in a frying pan over a medium heat. Fry the cumin seeds for 30 seconds, then add the onion and cook for 5 minutes until soft. Add the garlic, ginger and chilli and cook for 1 minute.
5 min - 3
Stir in the turmeric, garam masala, potatoes and peas. Cook for 3 minutes, lightly crushing some of the potato. Add the lemon juice, coriander and salt, then cool for 10 minutes.
- 4
Lay out one filo sheet and cut it into 3 long strips. Keep the rest covered with a damp tea towel. Brush a strip lightly with oil and spoon 1 tbsp of filling at one end.
- 5
Fold the corner over the filling to make a triangle, then keep folding along the strip like a flag until you reach the end. Tuck in the tail. Repeat to make 18 samosas, brushing each with oil.
- 6
Heat the air fryer to 180C. Cook in batches, in a single layer, for 8 to 10 minutes, turning halfway, until deep golden and crisp.
9 min - 7
Serve warm with the mango chutney.
