Method
- 1
Boil the potatoes in salted water for 8 minutes until almost tender. Drain well.
8 min - 2
Heat the oil in a large pan over a medium heat. Add the cumin seeds for 15 seconds, then the garlic, ground coriander and chilli powder for 1 minute.
1 min 15 s - 3
Add your ready made curry base sauce (see the base recipe), the water and the potatoes. Simmer for 10 minutes until the potatoes are tender and the sauce has thickened.
10 min - 4
Stir in the peas and cook for 3 minutes. Drain the tuna and flake it into the pan. Heat for 2 minutes, stirring very gently.
5 min - 5
Add the lemon juice and fresh coriander. Serve with rice or gluten free flatbreads.
Tips
- Use tuna in spring water. Tuna in oil makes the sauce greasy and in brine makes it too salty.
- Flake the tuna in at the end. Cooked for long it turns dry and chalky.
Storing and freezing
Keeps 2 days in the fridge, cooled within 1 to 2 hours. Reheat until steaming hot all the way through. Freezing is not recommended because the potatoes go grainy.
Questions
Can I use fresh tuna steaks instead?
Yes. Sear 500 g tuna steaks for 1 minute each side, slice them and fold in at the end. Keep them pink in the middle or they dry out.
Can I use canned salmon?
Yes. Drained tinned salmon works the same way. Remove any large bones and add it at the end.
